How do I quickly and efficiently stop the billing process starting when I haven't even received the Sim . . Or are we supposed to start paying for a service not yet delivered or set up. Bit of a con . I want to start the service on the 6th of September is this possible?

With PAYG, your SIM does not get billed, your service starts when you do your first topup - Guide How to Top Up (PAYG)
If you are a Contract phone user, with a new Pay-Monthly SIM, that is billed when issued, and is payable by day 14 of you receiving the bill (a month in advance).
