How do I change the network settings on a phone that used to be on contract to pay as you go so that I can text.

The settings should automatically be picked up off the sim (assuming you have the correct sim type), but if not, see help here

Hopefully o2 sent you a new sim when you changed so you have the correct type. If not visit an o2 store or call customer service otherwise the centre number will revert to the default of the sim every time you reboot or switch off and on.
