Understood, but if the guide states 500 mins on £10 Big Bundle before standard rate charges start, what is it for the £5. Why is it so difficult to get an answer to this?

That is an old Big Bundle. All the new Big Bundles have unlimited minutes and texts. If you just want minutes and texts, then this the bundle for you.

Why is it so difficult to understand when the correct information has been advised to you by four different people, one of whom works for O2?

Hmm...hard to declare this solved when this is stated in the guide about allowances
‘Big Bundles
PAYG customers can select a Big Bundle which gives you allowances in exchange for credit.
For example, currently £10 will give you 2gb of data, 500 mins and 5000 texts, but you will not have any credit, so if you need to make any chargeable calls, you will need to make an additional Top Up’
So, 500 mins for the £10 Big Bundle! Really?!
