With the annual tariff price increase on monthly tariff, as a minimum user I'm looking to switch to Pay as you go. But I can't find the real Pay as you use tariff anymore. Do I have to pay a monthly 10 ponds each month? Can I not just have a balance on my sim and pay for each text and phone call I make?

Yes, they no longer sell it or advertise it, it is bundles only..
Have a look at Talkhome who run on 3 as they do a 1p Mobile copy, or have a look at GiffGaff who run on o2, and then port your number out..
Unfortunately classic PAYG is been culled by all networks, as there is no money to be made.

he is not asking about credit expiry or usage requirements...

You say you are a minimum user - I would also class myself as a minimum user, no data, a call or two each month and maybe a couple of texts. Can't really get much less use out of the phone.
I would suggest that if your use is similar (bear in mind most calls are 55p/min and texts are 30p each) then you could top up £20 and select the £25 bundle, then you'll not have enough to get the bundle so you'll pay for each call at standard rates as per this link pay-as-you-go-big-bundle-rolling-plan-tariff-standard-rates
As long as you keep your balance below the value of your chosen bundle it should work.
