Why is there no facility on My o2 to enable me to change my email details...I no longer use the one that you have

The site design isn't the most intuitive I have to agree, and it is very easy to get lost in the site.  It is a very messy interface.

 

Here are some screenshots that will help.

Weirdly, even if you're logged in after clicking as indicated above, you'll be asked to log in again

 

Once you've done that click the "Manage My Details" option

Then scroll down the Sign In Details section

Log into your MyO2 http://www.o2.co.uk/myo2 and click on "Manage My Details"

Very easy to do in My O2. Alternatively call customer service but you really shouldn't have a problem if you follow the advice above.
