take photos if you can for your records and 

make notes of all the numbers relating to the phone ~ IMEI etc., on the phone

before sending off. If I am sending something very important I even take a

photo of the parcel and receipts etc.

Never got too much information.

Yes you need verifiable evidence. Digital photos store EXIF information so it will record the time and date when they were taken.
