You can't just change the name.
The only way to do it is for you to take your own new contract then ask your mum to transfer the number to you. This will then cancel the old account so this needs to be done when the contract period has met its minimum term, or else there will be early cancellation charges.

You can change the bank account from which payment is taken, to an account in your name. You can do this under payment details in My O2.

If you changed it to your bank and then failed to pay, they would come after your Mum for payment still.
