Having bought my wife an iwatch what sim do I need to work with her account

You don't it is all setup in the App on the iPhone, if bought from anywhere but o2 and you will pay the £5 per month.

If bought from o2, it will be attached to your o2 number and there is no way to link it to your wifes, unless you pay off the device plan.
