I like blue cheese. Apparently
Shropshire Blue is slowly gaining as an alternative to Stilton. A dark yellow colour, almost golden-brown but fudgy and it is buttery and creamy and mild, with delicate, peppery blue veins throughout so it boasts.

Alas, shipping cheeses from Great Britain to Northern Ireland has become a bit restricted, the company above ships to Scotland (including the islands) and Wales and England.
Just look at the way a cheese retailer located in Ireland has to work to make sure cheese shipped to anywhere on the island of Ireland does not get hammered by shipping delays, additional freight costs, etc:
* As our website can’t distinguish between Northern Ireland and UK, select "Ireland" as the delivery country in the checkout process, if you want an order to be sent to an address in Northern Ireland. This will save you freight costs. Then in the post code field, enter the Eircode V95 HD70 of the Burren Smokehouse. Enter Lisdoonvarna as the city/town. Make sure to enter the real delivery address details in the other address lines so that we know where to send the order. We will then manually change it to the right delivery address in our system.

I love cheese @TallTrees but prefer to stick to "plain" varieties ; Cheddar, Cheshire, Lancashire and the like. 😀

Actually I like "Danish Blue" best.
Brie is lovely too and it comes blue too 😄
Sorry to read such difficulties. Leaving Europe U. caused much hardship and cost.
Many farms now make cheese along side their main farming business. Goats cheese popular, not for me though.
