Hello everyone! I've come to celebrate with you.

 

Today is one of my favourite days of the year 😆St. David's Day, Lewys? Because you're Welsh. Yes, yes, that too. Oh, we see, because it's Shrove Tuesday? You could say that, but of course, I'm talking about Pancake Day!

 

I implore you to indulge in those delicious pancakes before you have to give them up (or other treats/habits) for forty days from tomorrow! But, not only that... Share those photos 📸!

 

I'll be making some vegan (😐) ones this evening, so will revisit with photos of my own. Here's the pancake recipe I'll be following, that I got from a friend:

 

  • 1 cup soy milk
  • 2 tablespoon apple cider vinegar/lemon juice
  • 3 tablespoon oil
  • 1 cup self-raising flour
  • 1/2 tablespoon salt
  • 2 tablespoon sugar
  • 1/2 tablespoon bicarb soda
  1. Put soy milk and vinegar/lemon juice in a jug, leave for 10 minutes
  2. Add oil to the wet mix
  3. Combine flour, bicarb soda and sugar in a separate bowl (sieved)
  4. Combine wet and dry, whisking briefly (do not over mix)
  5. Fry on medium-high heat in a pan greased with oil

Hopefully, the recipe lives up to past pancakes I've had in the past. And the recipe serves 3-4 people if you want to give it a try.

 

The recipe above does raise a question, though. Maybe, a couple...

 

  • Pancakes or crepes!? (crepes)
  • What are the best toppings? (lemon and sugar)
  • Bonus question: Are you giving up anything for Lent tomorrow?

I can't wait to see everyone's pancakes/crepes. The only thing which comes close to eating them, is staring at photos of them 🥞😅! Have a nice day everyone.

We usually have ours in the evening but up early so made the batter and have had 3 already @lewys-gp 

My topping is lemon juice and sugar. (Just like my Mum made). Delicious. 😋

I ate all of mine before I saw your request for photos @lewys-gp. I don't know whether it's a regional thing but my Mum used to cook pancakes, do the filling, then they were rolled into a long sausage shape. Never eaten open. Lol.

No problem, @Cleoriff. We would put the toppings on and fold, but not a roll! It was very difficult not to start making mine during my lunch break 🤣.

Looks damn gorgeous @lewys-gp. Very mouthwatering. 😋

The difference between mine and yours is this. Your pancakes are smaller and thicker. Mine would cover that plate and are more like a crepe. That's why we can fold or roll mine.

Yes, it was unusual for me to have this more American version than the usual crepes! Felt like I was missing out on my childhood 😅😂@Cleoriff
