You need 3 things:
A 5g phone
a 5g sim
Be in a 5g area O2 Service Status

Various reasons including
5G not selected as a network type in your phone settings
SIM is not 5G enabled and needs replacing (call in store with Photo ID to replace)
You are not in a 5G Area
And if you are on PAYG 5G is not available to you.
