Received a bill for O2 airtime even though I have finished contract and reverted to Sim only.

I cannot reach by any means O2 to sort out and aware I only have a few days left. How do I cancel the airtime?

Sim only is airtime so not sure what the problem is?
Unless you mean you have two bills?
If the second then you need to keep trying to call them.
