You can use your UK allowances whist there at no extra cost, so that is the cheapest option for you.
You could use a local sim if your phone was unlocked which may give you faster data speeds but it depends what you want to use data for.
O2 will throttle your data if you use it for streaming services such as Netflix, YouTube etc.
I have no affiliation whatsoever with O2 or any subsidiary companies. Comments posted are entirely of my own opinion. This is not Customer Service so we are unable to help with account specific issues.

Currently using:
Pixel 7a (O2 & Lyca), One Plus 6 (Sfr), iPhone 12 Pro Max (Vodafone)

It all depends on the local network..

Telefonica should work fine, although at peak holiday season they may put network controls in to protect their network.
- Xperia 1V - o2 and Spusu
- Pixel 8 Pro - o2 and Vodafone UK

@ScarfaceThere are 4 main networks on the Canaries. These are

Movistar

Orange

Vodafone and

Yoigi

The one of choice, if with O2, is Movistar, as it is in Mainland Spain...

I would also expect that Movistar will be the network that your SIM card automatically connects to.
If not you will need to manually search for it if it is your preference.
