I am on a pay monthly contract. I am often overseas and like to
check my Voicemail from a remote phone by:
Calling my O2 number (My O2 sim turned off)
When Voicemail kicks in - I press *
Enter my passcode on prompt
Then can listen to Voicemails.
If I change my contract to a "Pay As You Go" does that
change the way I retrieve Voicemail ?

From memory, voicemail access to retrieve messages is free, if your bundle has minutes left, on Contract, but chargeable on PAYG tariffs. Check that out in your PAYG product's terms and conditions, to be sure. Good luck!

Not sure what you mean by "remotely", but accessing O2 Voicemail is possible both from your O2 mobile or any other phone line (land-based or mobile): Guide: All you need to know about O2 Voicemail 901
