If I was to get an Iphone on my next upgrade - Could I use Itunes on Ubuntu Linux to download stuff?

No you can't use iTunes on Linux, unless you use something Winboat or Wine... 

iTunes is no longer really supported on any OS, its  slowly being killed off...
