I'm talking about both phone and watch.

O2 post re watch here https://community.o2.co.uk/t5/Welcome-News/Apple-Watch-launches-on-O2/m-p/1231739#M31037

Well if what you're saying is correct, absolutely no-one at O2 seems to know about it. They've put me on hold multiple times to go and check and have eventually conceded that it isn't something they offer to personal customers. I'd prefer to hear what you're saying confirmed but I can't find anyone able to do so - or let me utilise eSim with my existing contract and device.

I edited to provide a link above regarding watch.
No eSim support from o2 at all for phones, only EE in the UK provide that.

Unless, of course it's something really new that no one yet knows about ?

nope, @MI5 your right. eSim support for for O2 at the moment is limited to the Apple Watch, no phone support

Which is odd since the technology is the same behind them.

Vodafone are the same. They support Apple Watch eSIM and have done since September 2018 but do not support it on the phone as yet

Only EE support it on the phone and I use the term support it pretty loosely as I'm often met with blank looks in my local EE store whenever I need to do anything eSIM related
