What happens to my new contract if new iPhone is delayed?

Hi there, my upgrade is due tomorrow and I’m wishing to upgrade to the iPhone 13 pro max (with a completely different tariff) but obviously right now it’s out of stock/delayed delivery so what happens if I order it? Would my new tariff/contract start once the iPhone is dispatched or will it start straight away? Am I allowed to cancel it if the expected delivery date gets too long? I’m not sure how it works when the phone won’t be delivered for a while and I don’t really want to pay for a tariff on an old iPhone X that doesn’t work well anymore.
