I have an iPhone 8 Plus on contract and I'm looking to end my contract, I can see where I have to unlock it online (https://www.o2.co.uk/help/phones-sims-and-devices/unlocking-an-o2-mobile-to-use-on-a-different-netwo...) but I want to know if I have to send the device into O2 or do they send me a code

The iphone is unlocked directly by Apples servers so no need for a code or to take it into O2. You will get an email or text when it's been unlocked.
