I upgraded my phone yesterday and bought a sim only for my daughter - everything has transferred over from my old phone to the new but when my phone rings so does hers? Even tho she has her own new number now..  How can we rectify this?

You need to sign out of your Apple ID on the old phone and login with a new one for your daughter.

Thank you that’s worked

Onky other problem we have is that all my photos have transferred onto her phone and if we delete them from there they also delete on mine

You will need to reset the old phone and set it up as a new device.
