My number has been transferred over from my old provider and texts and calls are working using the number however I am unable to change “my number” on the iPhone and I can’t use iMessage or FaceTime as it says that the sim is not associated with the iphone

Try resetting your network settings as a first step.
If not, a new blank sim will be required from any O2 store.
Take photo ID with you.
