This might be a silly question but am I able to use all of the 5GB data on my iPhone, rather than share it on other devices if I change my taffif to sharer?

Just wondering why you would want a sharer plan? Either way you can use it as you like. Look here

Yes, the data is available to one or all devices on the same plan.
