I am in the process of setting up my upgraded iPhone 5s and I am struggling with sign in to iTunes Store it is bringing up an email adress that I don't use so can't enter password and won't delete it as it only gives the option of cancel and ok it won't let me move on what do I do?

If successful you can then restore your backup.
