I ordered an Apple watch 6 this morning. payment is showing as pending on my bank account but I have not received any email or confirmation that my order has gone through

Pending because O2 has claimed it yet.

It could be for credit checks or that you haven't completed the order process fully.

Check any emails for instructions or call O2 to check Guide: Coronavirus Community Help and Support
