Can anyone tell me what my care is? I've been sent an email asking for money but I've never signed up for it and don't know what it is? Is it a scam?

Never heard of it. Who is the email from? Can you copy and paste the mail into a reply here without including any links? If it's a scam we wouldn't want anyone clicking on a dodgy link.

No such thing as mycare. Apple extended warranty is called Apple Care which gives you extended warranty after the initial 12 months.

I thought it was o2 insurance or some other o2 service?

mycare@o2mail.com is an old CS email address.
Back in the days when you used to be able to email CS.

A quick search of the community brings up all sorts of scams etc with my care
