At home I appear to have full 3G signal. However that's no use to me at all, because within seconds the phone goes "Full 3G signal? Rubbish! Old hat! Why would I want to use that when I can just about see 1 tremulous bar of 5G signal, which is more than enough to download a single web page if you're prepared to wait several minutes? I shall switch you to that immediately!"
Is there any way to tell the phone to use 3G - or preferably, to go with whatever is the strongest signal? I can disable 5G in the settings, but all that does is fall back to 4G, which has the exact same problem as the 5G signal.

If there's no option for 3g in your network settings there's nothing you can do unfortunately.
You phone is programmed to use the highest network it can see which isn't always the best one.

I think the 3G option is being removed on US centric iPhones
My Galaxt S23 plus allows 3G / 2G automatic
or 3G only

It's an O2 decision on iPhones as it is controlled by the carrier profile.
