Hi, I took today contract, iPad with sim (20GB) can I keep iPad but sim give back?

You can but you need to pay for the iPad outright and in full.
Once paid for the sim can be cancelled for free with 30 days notice.

Or give it all back within your 14 day cooling off period and just pay for the 14 days usage .

Yes, you can take a sim only data tariff of your choice or just a PAYG one if you prefer.
