Hi
My phone is on O2 but bought my watch elsewhere. I tried connecting the watch to phone data plan but connection was on and off . Contacted O2 call centre and was told different stories each time from resetting the service on the watch ( this permanently removed the service )
to activating an eSIM ( this removed service on my actual phone )
to being told O2 does not provide data support for Apple Watches not purchased from O2.
At this point I had been paying for the service for about a month.
Frustrated and confused . Please assist .

I cannot promise that this will help, but have you considered taking your problem to an O2 retail store ? If you go at a quiet time, you might just encounter a member of staff that understands the problem and can resolve it for you. Then again, you might have a wasted journey.
