I have galaxy s2. Dropped it in water, dried out ok overnight. Seems to work BUT  can't get it off flight mode? Any ideas? Maybe it needs unblocking ?

As above try an let it dry for 3-6 days

Go to settings - accounts - google accounts - sync. Sync any others you have ie drop box an Samsung.

Restart your phone an keep your finger on the volume button so it goes to boot menu, here you can do a system restore. If you haven't damaged anything then it will reset to factory settings an good to go.

If you dropped it in water you can't be certain that your phone definitely dried out okay. The water would have gotten everywhere into places you can't see. You'll most likely have to send it off for repair.

If you tried to switch it on before it was properly dried out, which could take several days, you have more than likely ruined it.

Personally I would have given it at least three days in the airing cupboard before attempting to switch it on.

I would give it a few more days drying out and then see, if still stuck in flight mode then I would do a factory reset... You might get lucky.

having watched the gadget show I know (well according to the old bloke) if u don't rescue it in under 10 seconds and remove the battery IMMEDIATELY it's buggered anyway (sorry to ips and other non removables)

then shake a couple times to get rid of excess water

then put straight into a bowl/tub of rice and leave in a say warm place for a couple days

***I'm not guaranteeing this works***

however this worked on the show as far as I remember

You advise doing a back up before a factory reset (which will delete the back up you have just done), then you give the incorrect procedure to enter the bootloader on an S2. Adiitional to this, if the phone is water damaged it will have suffered from hardware failures which is most unlikely that a software reset will fix..... Yep, my pipe is missing 😞 Staff !!!! How very dare you wink
