I bought a Samsung A5 2017 A520F unlocked from Samsung, and I was told that seeing as I have an O2 sim in my phone I have to wait until O2 authorise the update, any idea how long that’s going to be

It's nothing to do with the sim card at all.
Updates are pushed out by CSC and serial number so your update will come from Samsung directly.

The networks simply do their own checks on updates pushed out by manufacturers. Once approved they go back to be rolled out following the process described by @MI5
