I want to add more data but don't want to wait till next month for it to start

Your only option in your case is to call o2 and they will be able to start it from when you require

Call 0344 809 0202 or 4445 (PAYG) / 202 (PAYM) from your handset

The follow the instructions below;

You need to call 202 from your mobile.
If you call 202, when it comes to the reason you are calling, stay silent for 15 seconds and you will be taken to the keypad options.
Press 2 for Everything Else

Press 5 for More Options
Press 7 for Anything Else which will put you though to someone.
- Xperia 1V - o2 and Spusu
- Pixel 8 Pro - o2 and Vodafone UK

If you add a bolt on in will start immediately.
