I’m new to O2 and placed an order today (24/12/2020) for delivery on 29/12/2020. I received a bunch of legal document emails, CCA, SECCI, etc. Then an email saying:
“Thanks for your order - it's now full steam ahead at our end.
We'll process your order as quick as we can, so it will be in your hands
before you know it. And if you're itching for updates (which we're sure
you are), keep an eye on your inbox for news of its progress and
I have tried logging into MyO2 but it’s not been 48hrs yet so I can appreciate it’s not up and running yet for me to track this order. What I want to know is, have I been accepted? Because if I have, I need to cancel my order with Apple, and if I haven’t I need to know I haven’t in case I end up with 2 devices!
Can someone help please? To my understanding I’ve been accepted but it doesn’t clearly state that anywhere.

It sounds as if you have been accepted, however you won't have anything showing in My O2 until your order is dispatched. You will get an email the night before it's dispatched, then you can track it in My O2.
If want to make sure you've been accepted you need to call O2. They are open from 10-2pm tomorrow. Numbers in this guide Guide: Coronavirus Community Help and Support
Advice from an O2 Guru regarding a way to get through:
If you call 202, when it comes to the reason you are calling stay silent for 15 seconds and you will be taken to the keypad options.
Press 2 for Everything Else
Press 5 for More Options
Press 7 for Anything Else which will put you though to an advisor.
Press Upgrade, Lost/Stolen or Fraud if you have to.

It sounds like you haqve been accepted but that is by no means a guarantee you will get delivery on the 29th
O2 don't have a live stock system
Until you have a dispatch email you won't be sure of delivery as per your order
