I have a Apple Watch that I don't use anymore but I am still paying the monthly bill. My friend said she wanted to get one for herself, so I suggested mine she just pays the monthly bill. Anyway what I am wondering is can I do this and is there anything else I need to do apart from clearing my data and unpairing from the watch. will she be able to use the watch as normal? sorry never done this before so just checking. thank you.

She won't be able to pair it for cellular use until you pay it off and remove it from your account.

It will also send her all your calls and texts etc until you do.

Just as an update, you don’t have to pay off the watch. As long as you unpair it then it will work no problems and she told me she didn’t get any call or texts that were meant for me.
