I think that's a Samsung choice so you would have to root to change it or you could try the new Google messenger app which changes colour depending on your contacts avatar.

Does anyone know how to change the colour theme for messages in the new update?

There are options to change the background, text bubbles and the font, but nothing to change the horrible orange colour that it now is. I've searched every part of my settings that I can think of, and I'm coming up blank. I really loathe the new orange look! 😒
