if I change my tarriff (more data) will I lose my switch up bolt on and 25% open discount?

Yes you need to add them again (not too sure about Switch but certainly the Open discount)

If you are talking about flexing your tariff to more data then the only thing that will change is the amount of data you have.

If you follow the upgrade path, then it is as above.
