I took my iPhone 6s Plus into an o2 shop and let them have it for recycling and was told the money would be paid into my bank account in 3-4 days. Has now been a week and I've heard nothing from o2 whatsoever so when am I going to get my money????

You'll need to ask the shop or CS I guess. As customers like yourself, we wouldn't know, sorry.
