Trying to buy XPERIA phone

Visited Dunfermline shop yesterday to see about a new phone for my wife - with the option to transfer all data from her old iphone.  Looked for an XPERIA as I use one. On display 3 models all of which were not available - why are they on display then? Even if they were available we could not have done a deal as their 'guru' was not available (sick) to facilitate the data transfer. Sales assistant checked availability at Glenrothes shop for the XPERIA Compact z5. Called them today to arrange an appointment with their 'guru' - first available day was 6th July.  When I transferred to the XPERIA at the same Dunfermline shop about 18 months ago everything was done at the time and I walked out happy with a working phone.  What has happened that it is now taking days to get a new phone? Only because we are happy with the O2 network have we not gone elsewhere for a new phone. Frustrated customers.

Edited to add...I bought a phone sim free and took it to my local O2 shop...they transferred everything for me new sim etc...within 10 mins

It's super easy to transfer on Xperia to xperia.
On old phone connect USB cable and connect to the USB otg cable that comes with most Xperia (short USB converter) and plug that into new phone.
Turn on new phone and log into your Google and if needed Sony account.
Now your contacts are already recovered.
On new phone open Xperia transfer mobile and click receive.
On old phone open Xperia transfer mobile and click send.
Choose what you want copied over and wait until it's done.
Insert old sim into new phone.
Done.

As part of the setup process with the Z5, it will ask you if you want to transfer your data from another phone.
Just make sure NFC is turned on and tap "yes" and the new phone will pull all content off the old phone for you.
