Got contract, when got fone my signal wasn't great but still able to get a signal here and there, now for the past 2 or 3 weeks, the nearest signal I receive to my house is 5 miles away, I am now paying for a phone that I cannot use, and with my wife pregnant, I may need a signal, sooner than later, wish this could get sorted out, or I may need to try another network again

Have you tried Settings ~ General ~ Reset ~ Reset Network Settings @Anonymous

Or get it booked into an Apple Genius Bar for a diagnostic.

I've tried everything, restoring, DFU mode, restorying again.

Reseting network settings, resetting all settings. You name it I have done it.

Interestingly I have carrier settings 16.0 on my Phone, but the highest version on Apple's website (which is where the settings come from) is now 15.6.

I have a slight suspicion that they rolled out 16.0 to some users and have pulled it on the sly...

It looks like 7.1 introduced some new changes to the way that the carrier settings are rolled out, which is possibly why I can't see anything beyond 15.6 on the Apple website.

The 16.0 settings must come from somewhere else.

Interestingly, all the networks got their settings aligned to 16.0 at the 7.1 update, Three and Vodaphone have both rolled out 16.1 updates (up form 16.0).

I wonder if O2 just haven't updated their settings properly?
