I have this problem too.
O2 customer services have re-sent me the directions to add the APN, however once you add it there is no option to select the new settings. Any ideas anyone, getting sick of not having connection unless on WiFi at home!

I'm having exactly the same problem, on two phones at once! They worked perfectly up until my old phone numbers were ported over to them (both were O2 numbers in the first place). I've tried the API settings, nothing. I tried wiping the SIM card on a cloth as suggested by O2 online chat helpy people, nothing, O2 have tried refreshing my account, nothing.
It's not a signal issue, because I've had my phone next to another O2 phone which had a full 3G signal in the same place, and I'm convinced it's not my phone's fault because it happend to two different makes of phone (HTC One X and One S) and the same time, when the numbers were ported.
Any help with this would be rather good.

I'm glad I'm not the only one having this problem.
I recently bought a One X which was originally locked to Orange. I've had it unlocked and I've manually added the O2 APN settings, but it won't let me select them, even though I can see the profile I've created.
In the O2 instructions it says that there should be a circle next to the profile, and to click on the circle to select the profile... Guess what? No circle!
Getting very frustrated now! What's going on O2?

So I've spoken with O2 customer services about the problem I'm having.
THERE IS A KNOWN ISSUE WHICH IS PREVENTING PEOPLE FROM SELECTING THE APN PROFILE WHICH THEY HAVE MANUALLY SET UP.
I had to provide a load of details to O2, which the customer service advisor then passed through to someone else.
She said that, as it's a known issue, they are working on it now and that someone from the Tech team (or whoever is trying to fix the problem) WILL contact me as soon as they have some news.
Now, here's the annoying part. They don't know how long it will take to fix, so it could be fixed tomorrow, it may not be fixed for weeks/months! How useless is that!
Basically, I now have a simple mobile phone with a posh screen. Thanks O2!
